Sometimes called "London Broil" these grass fed and finished round steaks are fairly lean. They are delicious marinated and cooked quickly over high heat (in a pan or on the grill) to rare or medium rare or stir fried. For a different but equally delicious preparation, braise them low and slow in liquid until they are fall-apart tender.
