Family Favorite Lasgna
This is the lasagna I grew up on—the kind that makes the whole house smell amazing and guarantees leftovers you’ll actually be excited about. It’s hearty, cozy, and even better the next day… so if you want to be a kitchen genius, make it ahead and reheat.

Ingredients

  • (1 lb.) Italian Sausage
  • (1 clove) garlic, minced
  • (1/2 cup) chopped parsley, divided
  • (1 TBSP) oregano
  • (1 tsp) basil
  • (2 1/2 tsp) salt, divided
  • (28 oz) whole canned tomatoes with juice, torn into pieces
  • (1 1/3 C) tomato paste
  • (6) lasagna noodles
  • (3 C) cottage cheese
  • (2) eggs, beaten
  • (1/2 tsp) pepper
  • (1/2 C) grated Parmesan cheese
  • (1 lb) shredded mozzarella

Directions

  1. Make the sauce: Brown the Italian sausage. Add garlic, 1/4 cup parsley, oregano, basil, 1/2 tsp salt, tomatoes (with juice), and tomato paste. Simmer uncovered 30 minutes.
  2. Prep noodles: While sauce simmers, cook noodles until tender in lightly salted water. Drain and rinse with cool water.
  3. Mix the filling: Combine cottage cheese, eggs, remaining 1/4 cup parsley, 2 tsp salt, pepper, and Parmesan.
  4. Assemble (9x13 pan):
    • Spread a thin layer of sauce on the bottom.
    • Add 3 noodles.
    • Layer half the cottage cheese mixture, half the remaining sauce, and half the mozzarella.
    • Add remaining noodles, then repeat layers, ending with mozzarella on top.
  5. Bake: 375°F for 45 minutes. Let stand at least 15 minutes before slicing to allow it to firm up for slicing.

Make-ahead tip: This lasagna is even better if baked the day before and reheated.
